Bircher muesli was created by Dr. Maximilian Bircher-Brenner, a Swiss physician, in the early 1900s. He developed the recipe as part of a health regimen for his patients at his sanatorium in Zurich. His goal was to promote a healthier diet based on whole foods and natural ingredients, which he believed contributed to overall well-being. Here’s the original recipe for Bircher muesli.

Ingredients (Serves 4)
2 cups rolled oats
3 cups milk (or yogurt, or a combination of both)
2-3 apples (preferably tart, such as Granny Smith), grated (with skin on)
1 cup plain yogurt (optional, for creaminess)
2 tablespoons honey (to taste)
1/2 cup nuts (e.g., almonds, hazelnuts, or walnuts, chopped)
1/2 cup dried fruit (e.g., raisins or sultanas)
2 teaspoons lemon juice (to prevent apples from browning)
Fresh fruits (such as berries or bananas) for topping
1 teaspoon cinnamon (optional, for flavor)
Instructions
Soak the Oats:
In a large mixing bowl, combine the rolled oats with the milk. Let them soak for at least 30 minutes (or overnight in the refrigerator for a softer texture).
Prepare the Apples:
Grate the apples and mix them with the lemon juice to prevent browning. You can leave the skin on for added fiber and nutrients.
Combine Ingredients:
Once the oats have soaked, add the grated apples, yogurt (if using), honey , nuts, dried fruit, and cinnamon (if using). Mix well to combine all the ingredients.
Serve:
Spoon the Bircher muesli into bowls and top with fresh fruits such as berries or banana slices. You can add extra yogurt or a drizzle of honey on top if desired.
Notes
Bircher muesli can be enjoyed immediately or stored in the fridge for a day or two. The flavors will continue to develop as it sits.
