Greek salad, also known as Horiatiki, is a fresh, vibrant salad made with simple ingredients like tomatoes, cucumbers, olives, and feta cheese. It's light, refreshing, and perfect as a side dish or even a light main course.

Ingredients (Serves 4)
4 ripe tomatoes, cut into wedges or chunks
1 large cucumber, sliced (preferably unpeeled for color and texture)
1 small red onion, thinly sliced
1 green bell pepper, thinly sliced (optional)
1/2 cup Kalamata olives (pitted)
200g (about 7 oz) feta cheese, cut into cubes or crumbled
Fresh oregano, to taste
For the Dressing
1/4 cup extra virgin olive oil
1-2 tbsp red wine vinegar
Salt and freshly ground black pepper, to taste
Instructions
Step 1: Prepare the Vegetables
In a large salad bowl, combine the tomatoes, cucumber, red onion, bell pepper (if using), and olives.
Step 2: Add the Feta
Scatter the feta cheese over the top. You can crumble it or add it in larger chunks, depending on preference.
Step 3: Make the Dressing
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
Step 4: Toss and Serve
Drizzle the dressing over the salad and sprinkle with fresh oregano.
Toss gently to combine, or serve without tossing for a more traditional look.
Serving Suggestions
Serve the Greek salad with crusty bread or pita for scooping, and enjoy it alongside grilled meats, seafood, or as part of a mezze platter!
