Omelette with Ground Meat (Switzerland)

This dish combines the traditional Swiss omelette, similar to French-style crêpes or pancakes, with a savory ground meat filling, often seasoned with onions, garlic, herbs, and spices. It’s a popular home-cooked meal in Switzerland, offering a hearty and comforting option that’s typically served with a side of vegetables or salad. The best part? It’s easy to prepare yet incredibly flavorful.

Ingredients (Serves 4)
For the batter:
300g (10 oz) Plain white flour
4 eggs
3dl (10 fl oz) milk
2dl (7 fl oz) water
0.5 tbsp Salt
For the filling:
1 onion
1 clove garlic
600g (20 oz) minced meat (beef)
1 tablespoon tomato purée
1 bay leaf
1.5dl (5 fl oz) Beef broth
2dl (7 fl oz) red wine
Instructions
Batter:
In a large bowl, whisk the eggs together until smooth. Gradually add the flour, a little at a time, to avoid lumps. Once the flour is mixed in, slowly add the milk, stirring continuously until you have a smooth, thick batter.
Season the mixture with salt and pepper to taste. You can also add other spices like paprika or herbs, depending on your preference.
Heat a non-stick skillet over medium heat. Add a tablespoon of olive oil or butter to the pan and let it melt, ensuring the entire surface is coated.
Pour about ¼ cup of the batter into the skillet, spreading it out slightly with the back of a spoon if necessary to form a round shape. Let it cook for 2-3 minutes, or until the bottom is golden brown and the top starts to set.
Filling:
Take the minced meat out of the fridge one hour before frying.
Finely chop the onion and garlic.
Sear the minced meat in olive oil, dust with 1 tablespoon of flour, and season with paprika and pepper.
Add the onion, garlic, and bay leaf to the meat and sauté together.
Add 1 tablespoon of tomato purée and mix well.
Deglaze with red wine and season with bouillon.
Add water and simmer on low heat for 40–60 minutes. Adjust the seasoning with salt at the end. If you're short on time, you can also shorten the cooking time.

Serving:
Spread the sauce over the omelette, roll it up, and serve.
