Pommes Duchesse (Duchess Potatoes) is a refined French dish made by shaping seasoned mashed potatoes into elegant, piped swirls and baking them until golden and lightly crisped on the outside. It’s a classic side that adds elegance to any meal, popular in French cuisine for centuries and often found accompanying roast meats, holiday dinners, or festive occasions.

Ingredients (Serves 4)
2 lb (900 g) potatoes (Yukon Gold or Russet work well)
3 tablespoons butter, softened
2 egg yolks
1/4 cup heavy cream (or milk, for a lighter option)
Salt and pepper to taste
1/4 teaspoon ground nutmeg (optional, for added flavor)
Instructions
Preheat Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Potatoes
Peel the potatoes and cut them into evenly-sized chunks.
Place the potatoes in a large pot, cover with cold water, and add a pinch of salt.
Bring the water to a boil, then reduce the heat and simmer until the potatoes are tender (about 15-20 minutes).
Mash the Potatoes
Drain the potatoes well, then mash them thoroughly until smooth (you can use a potato ricer or a masher for the best texture). Avoid using a blender or food processor, as this can make the potatoes gluey.
Let the potatoes cool slightly.
Add Butter, Egg Yolks, and Seasonings
Mix in the softened butter, egg yolks, heavy cream (or milk), salt, pepper, and nutmeg. Stir until smooth and well combined.
Pipe the Potatoes
Transfer the mashed potato mixture to a piping bag fitted with a large star tip.
Pipe swirls of potatoes onto the prepared baking sheet, spacing them about an inch apart.
Bake
Bake the potatoes for about 15-20 minutes or until they are golden brown on the edges and lightly crisp.
Serve
Serve hot as a beautiful and delicious side dish to your favorite main course.
